Chicken Spaghetti

We haven't made a 'recipe' dinner in a while so this is more to show off our new plates. But this is a great dish... Chicken Spaghetti! A recipe from my dear friend Sue...super easy, super yummy. 2 frozen chicken breasts 1 jar of your favorite sauce enough pasta for the # you're feeding any veggie you want to add (we always add yellow/red pepper & onion) top with cheese boil chicken until done (about 15 minutes) - if you use fresh it won't take as long. while the chicken is boiling chop your veggies and add to a skillet on med. heat w ith a lil olive oil. once the chicken is done - pull it out of the water with tongs and add the spag. noodles to the chicken water. cook until done and drain. let the chicken cool then pull it apart with your fingers. any size you'd like...just shred it and add to the skillet. pour in the sauce, let simmer for about 10 minutes. you can either add the noodles or pour over noodles. top with cheese, salt and pepper! Summer Sausage Pasta and Veggies

Summer Sausage Pasta and Veggies (Sorry no picture) 1 Jar Ragu Chunky Spag. Sauce (any flavor) 1 pk Skinless Summer Sausage, cut into "coins" 1 cup chopped broccoli 1 cup chopped cauliflower 3/4 cup chopped red pepper 3/4 cup chopped yellow pepper 1/2 cup chopped onion 1 cup chicken stock 2 cups Whole Wheat pasta, uncooked - use your best judgment on how much to make. Start the pasta water....bring water to a boil, pour in the pasta. Cook for 10 minutes. Pour chicken stock into a skillet on med. heat. Put summer sausage "coins" and veggies, bring to a boil. Turn the heat down and add the spag. sauce. Simmer for approx. 10 minutes or until cooked down. Drain pasta and either pour into skillet and stir or serve onto plates and top with sausage sauce.
